Commercial Dough Sheeters
Manual and automatic commercial dough sheeters from Tekno Stamap, for Scottish bakeries laminating puff, croissant, Danish and shortcrust. The Tekno Stamap range
Tekno Stamap has built dough sheeters in Italy since 1982, from fold-away bench models to fully programmable production machines.
Manual dough sheeters
On a manual sheeter the operator sets the roller gap and runs the belts back and forth by hand. They suit smaller bakeries and pastry shops that laminate in batches and want direct control.

EASY
A compact manual sheeter, as a table-top model or on its own base. The table-top version folds away at the end of the day, so it suits a tight bakery.
Best for: Small bakeries and pizzerias

LAM 2
A sturdier manual sheeter with belts 500 or 600 mm wide and a digital display of the roller opening, so every sheet matches the last.
Best for: Daily laminating by hand

LAM 650
Tekno Stamap’s widest manual sheeter, with 650 mm belts up to 1.6 m long for bigger sheets per pass.
Best for: Larger manual batches

TABLETTE
A compact table-top sheeter with small rollers, built for fine pastry work and sugar paste.
Best for: Patisserie and cake decorating

It comes down to how much you laminate and who’s on the machine. A manual sheeter gives you direct control at a lower cost. An automatic sheeter runs the same programmed cycle every time, so your operator can get on with something else while it works.
| Manual (EASY, LAM 2, LAM 650, TABLETTE) | Automatic (SMART, INDUSTRIAL SMART, AUTOSMART) |
|---|---|
| Suits smaller volumes and tight spaces | Suits higher volumes and daily lamination |
| Lower upfront cost | The same result every batch, whoever runs it |
| The operator sets the thickness pass by pass | Frees your baker during the cycle |

Dough sheeter FAQs
How much does a commercial dough sheeter cost?
It depends on whether you need a manual or automatic machine, the belt width and length, and options such as a flour duster or cutting attachment. A table-top manual sheeter costs far less than an automatic production model. We don’t publish prices, because every bakery needs a different set-up. Tell us what you make and we’ll quote for your bakery.
Should I buy a manual or automatic dough sheeter?
Choose manual if you laminate smaller batches, have limited space or want to keep costs down. Choose automatic if you laminate every day, need the same result across shifts, or want to free your baker during the cycle. The Tekno Stamap SMART is a good middle ground, because it can be programmed or run by hand.
What size dough sheeter do I need?
Belt width sets the widest sheet you can roll, and belt length sets how much dough you can handle per pass. Tekno Stamap manual sheeters run from 500 to 650 mm wide; the AUTOSMART range uses 700 mm. Think about your largest sheet and your bench or floor space, and we’ll measure up during the site survey.
Do you install the sheeter and train our staff?
Yes. Every sheeter we supply is installed and commissioned on your floor, and your team is trained before we hand over. After that we look after servicing and maintenance, with genuine parts direct from Tekno Stamap in Italy.
Can I see a Tekno Stamap sheeter working before I buy?
Tekno Stamap runs Stamap Lab, a test kitchen at its factory near Vicenza where bakers can try machines with their own dough. If you’re choosing a sheeter, a visit is well worth it: you can use the full range in the lab.
How long does delivery take?
Machines ordered from Italy usually take around 8 to 10 weeks. We’re also building up UK stock of sheeters, so ask what’s available now.
